Honey will not go bad after 12 weeks… Just as salt will not expire after two years, when it was in the hill for millenias…
If you are unsure, do the three steps: look, smell, taste. Does it look ok? If yes, smell it. Does it smell ok? If yes, taste a small bit. Still ok? Food is most certainly ok! Goes with nearly every food item… Ah and of course, if one of the above gets an “eeh, not as usual”, don’t eat it.

It’s likely in reference to the packaging. Plastic breaks down over time. If you want it to last longer you can store it in a glass container with a good fitting lid.

I believe it is in reference to the “quality” and bioactivity of the honey. Manuka is held in high regard for having certain health beneficial chemical compounds, the levels of which can vary over time. The honey will be extremely unlikely to go off after 12 months (unless exposed to water) but flavour or health benefits might get worse as these co.ponents break down or accumulate in the honey.

i supposed manuka honey could be different but i googled it and it seems manuka has the same years-long expiration date as regular honey

some honeys as I understand it can crystalize and transform to a block which will need some work to dissolve. ( happened to me a few times ) could be the manufacturer trying to get you to consume before that happens.
