It’s just novelty sushi. It’s all done using standard sushi ingredients it’s just shaped in a different way. There’s absolutely nothing wrong with this and it probably tastes delicious.

I love sushi and totally try these when I see them. For the most part they all have the same issue. The ingredient ratio per bite. The traditional set up is superior bc I get the right amount of everything in one bite and this is not the case with stuff like in the video.
