So Wednesday I threw a Picanha in the bath at 131f before work to sear when I got home. I had a really busy day and was worn out and decided to just toss the bag in the fridge for Thursday night.

I had used a standard s/p/gp rub with a little bit of onion powder.

Thursday night I warmed it up to about a hundred degrees on the smoker, probably for close to two hours, re bagged it and tossed it back in the bath at the same temp for two hours before the sear.

I went out for a smoke while the cast iron was heating up on max high heat. I used avocado oil, but I let the pan get too hot. It ignited about as soon as I put it in the pan. I took the flaming pan off the heat and grabbed the first towel I could find to soak and cover the flame.

Immediately oiled again and put back on a bit less heat, and these are the results.

Best damn crust I’ve ever made, and probably one of the best cooks I’ve ever done.

I’d rather not chance burning my house down again, so this will probably be the crust I’ll be chasing like junkies chase a high!

Also, during sear I dropped some butter, garlic cloves, rosemary and thyme sprigs and basted a bit.

    Came to find out what machine I was missing that could give me this “turbo sear” you speak of. Leaving disappointed that it requires starting a grease fire lol.
