I use Maangchi’s Sokkoritang recipe but the kimchi is Korea Kimchi. I haven’t attempted homemade kimchi yet.
Whenever I make this, I have to clarify to my family and friends that it’s Korean style oxtails, not Jamaican. It’s interesting to see how different cultures approach the same base ingredients.
