I received a bunch of parmesan blocks from a relative, but I think the heat made them go bad. They stayed out of the fridge for about a week during the transit. They have this oily, slimmy watery thing inside of them and when you open it they have a strong smell of parmesan(like shredded parmesan on hot pasta).

    I think you are good to go. When Parm is not refrigerated it will oil off but that does not mean it’s bad. It’s not going to be a safety issue.

    Nah, you’re good all cheese “sweats”. If it bothers you enough you can give it a salt bath to get the oily residue off.

  4. I gave up, it goes mouldy in the fridge in about 2 weeks. Every time.
