for 500 grams of pasta I use 7 sometimes even 8 if I want to obtain a homogeneous cream, ATTENTION!! Eggs only use yolks!!!! add pepper to taste and grate over everything 175 with a fork beat the mixture as if you were going to get an omelette. cut the GUANCIAL (totally different from the pancetta) heat a non-stick pan and without adding anything (oil, salt, etc.) lay the bacon in it for 10/15 minutes, melting all the fat. boil the water and add the pasta of your choice. when it is ready, drain it, then sauté it in the pan together with the guanciale for a minute, pour it into the bowl with the egg yolks and pecorino cheese and you’re done! final tip: if you like the egg cream more “liquid” add a little of the pasta cooking water and mix (obviously before adding the pasta! 😂 Enjoy your meal!!
