My mom is from Myanmar (then it was Burma) the one thing that she talks about a lot is Tea Leaf Salad. Get that if you have a chance! She makes it all the time and it’s delicious. Also- that mohinga looks next level!!! You are lucky.

Bus stops in SE Asia offer next level food indeed!
I made friends with my bus driver from Hanoi to Sapa, he invited me to lunch at one of our stops and when the girl brought over the platter I was blown away! Fried fish, pork broth with veg, stir fried morning glory, pickled Indian eggplant, steamed rice.
