I’ve made the OG recipe a handful of times. Each time I tweaked it a bit but still found something I could improve upon. This time though… oh man. I think I nailed it.

The chicken marinade is virtually the same as Kenji’s, with the addition of lemon zest and Greek yogurt. I also grilled the chicken thighs, because why not?

The rice is a saffron rice recipe from a Mediterranean restaurant I used to work at. Basically sauté an onion and the rice in some butter, then add smashed garlic, peppercorns, bay leaf, bloomed saffron, turmeric, bay leaves, salt, and chicken stock.

The white sauce is equal parts greek yogurt and kewpie mayo, cardamom, coriander, parsley, lemon zest, a lot of lemon juice, and S&P to taste.

The red sauce is homemade harissa (also a recipe from that Mediterranean restaurant) with arbole chilies, roasted red peppers, roasted garlic, olive oil, and lemon juice.

The pita is EatLikeGreekWithJulie’s recipe from TikTok, smothered with garlic butter.
