Join me in the garden as I pick a few things to get the preserving season started. Strawberry Honey butter jam is up first, rhubarb harvest and garlic scapes starting the season off with a bang. Here is the strawberry Honey butter jam recipe.

Strawberry Honey Butter Jam
3 pounds strawberry’s washed and hulled
3/4 cup sugar (I used maple sugar)
3/4 cup honey
2 tesp. vanilla
1 tesp. bottled lemon juice
1/4 tesp. salt

You will need 4 pint jars, a water bath canner, tall pot and food processor or blinder.
wash and hulle strawberry’s
puree strawberry’s in blinder or processor add sugar, honey, vanilla, lemon juice and salt, blend and pour into a tall pot. Cook over low heat for an hour and 30 minuets. stirring frequently until jam has thickened. Ladell into pint jars and process for about 10 minutes , adjusting for altitude. turn off heat and let rest in canner for about 5 minutes, remove, let cool over night, check lids for seal and store away for the long winter when you need a spot of something beautiful from the garden.

  1. Things look great. Jam looked good. You threw me for a loop with the white rhubarb…looks like a green rhubarb. The green is a lot more tart but I like it – my two plants take up around 32 sq ft..leaves are huge. If you want a sweeter rhubarb, the strawberry rhubarb (all red) will give you that. Thanks for sharing.
