I have a huge problem with replacing carbs with vegetables. I am not eating zoodles or cauliflower rice. I’d rather have my carbs with a lighter sauce.
I saw a recipe for cottage cheese alfredo that I’m willing to try, but I am curious if people on here know of other cottage cheese replacement type recipes that are tasty.

I could google it, but most of what comes up is intended for people who are bulking and trying to eat more protein, which is not my thing right now.

I’ve been doing a jalapeño artichoke dip and it’s pretty damn good. So in the food processor I thoroughly blend one serving of cottage cheese, one half serving of chive and onion cream cheese plus like a third cup of pickled jalapeños. Also cayenne, pepper, garlic powder and a teeny pinch of salt. Next I drain a can of artichoke hearts and a can of hearts of palm. I squeeze all the water out of that by pressing a bowl into the colander several times until it’s pretty dry. I add all the hearts to the food processor and just pulse until they’re roughly chopped. I like it with Trader Joe’s thin rice cakes. Overall it’s like 100g for 60 calories. You could reduce or eliminate the jalapeño if you want. I guess it’s not really a replacement but it’s good.
I’m a big fan of using cottage cheese for the replacement of ricotta cheese. I saw someone make an IG post about it with toast, and it’s such a helpful swap out for me because how creative you can get. For example: Toasted bread + cottage cheese + whatever toppings. Some of my favorites are bruschetta, chili garlic oil with honey, lemon zest and blueberries, and strawberries and balsamic vinegar.
