Stella’s strawberry cake and thoughts for next time

    This was fun to make and really pretty. I bought baking powder with aluminum and it kept the colour really nice. However, I thought the flavour was a little chalky and the texture was on the dense side. Reading her post after, I suspect that my strawberries were too sweet and not acidic enough. I got really sweet local strawberries, so next time I try maybe I’ll just get supermarket ones or frozen strawberries, or experiment with cutting down on the baking soda a little.

    Has anyone made this cake before? What were your thoughts?

    I haven’t made it before, I’ve had a lot of success with this strawberry cake recipe: https://sallysbakingaddiction.com/strawberry-cake/ where you concentrate the strawberry purée for the cake (boil it down to get rid of a lot of liquid) and you use freeze dried strawberries in the frosting. As a bonus, the concentrated purée is nice to add a little smear in between the layers of cake as a filling, and to eat on birthday waffles
