    It looks like there wasn’t enough gluten development. It could also be that you tried to roll out the dough before it had warmed up enough after coming out of the fridge.

    You didn’t knead it enough and it looks too dry, and possibly a little cold.

    I don’t think you need to keep the dough in the fridge for a whole day. Really only 30 minutes is all it takes.
