
I’ve got a standard gas oven as well as an air fryer. No grill unfortunately. Another question is : large glass baking dish over a cookie sheet type pan? Sorry for my lack of knowledge, I am trying to get better in the kitchen and Reddit has been such great help along the way! Thanks for any suggestions!

I do mine on a baking sheet. Cover vegetables in olive oil (not dripping, just coated), sprinkle with garlic powder and Lowry’s seasoning salt put in oven at 425 degrees for 20-25mins (until browning). So good.
I would toss in oil, salt, pepper/whatever seasonings you like and toss it in the air fryer. Ideally as one layer, if we stuff is piled up in there it will take longer to cook and require stirring/shaking.

I don’t understand all these people suggesting olive oil. The smoke point for olive oil is 410.
I would just put grape seed oil and seasoning on it and then but it in the oven in a glass baking dish

Roast in a high heat oven with oil s p and garlic powder, but bear in mind your onions and carrots are going to cook way quicker than your broccoli or potatoes, so watch out for that
The onions and carrots are cut a little thin. When roasting, everything should be a similar size.

Oven at 420 for 25 minutes. Pull out of oven and mix around and put back in the oven for another 10- 15 min. Use avocado oil and season with salt, pepper, dried oregano and paprika before you put it in the oven. Also, make sure it’s not too crowded on the baking sheet. If you need to, use two or more baking sheets. This can be used for almost all veggie bakes. Trust me on this. It’s one of my go to meals. I probably make exactly this at least once a week.
Pro Tip: Add fresh chopped garlic when you take it out to mix it at 25 min.
Agree with the uniform size comment. Lay down parchment paper. Turn veg with tongs every 15 min. Diced sweet potatoes, squash give a nice smoky flavor too! Usually add mushrooms.

Put the cookie sheet in oven first while it is preheating. Then add oil and your vegs. Should sizzle when you add them. Gives the bottom a good crisp

That looks like a delicious salad! I don’t think it needs to be cooked at all.
Toss in oil, balsamic vinegar, rosemary and thyme, salt, pepper and roast at 475 degree, mix the veggies once or twice while roasting. The potatoes will take about 45 minutes and the other veggies might take about half that so you might want to separate the potatoes out and add the rest back. The carrots and onions are cut a little smaller than I prefer (will cook faster for starters) but not big of a deal.
Toss with oil, season with salt, pepper, garlic powder, cumin, and your favorite dried herbs. Spread on a sheet pan and roast at 375. If it was me I’d mix in some rounds of smoked sausage and it’s a one-dish meal

I usually do one of those onion dip packets that you find in the dressing/sauce isle.
Dump some olive oil in there (for your amount like 1-2 tablespoons to start). Then slowly add the packet and mix until coated.
I’d add some whole cloves of garlic (smashed) and then grate some parmesan on it once its done. Nutritional yeast if you’re vegan.

I do mine on 425F until I see little blackened bits on the veggies. Depends on volume and stove but 30-45 minutes.

Olive oil. Simple seasonings. Also I like to use parchment paper. Easy cleanup and it can create some nice crisp.
Of course, one could use this melange of oiled, salted and peppered vegetables as the bed on which to put half of a chicken on top. Sprinkle with salt, pepper, lemon juice and paprika.
Bake at 350 for 20 minutes. Pierce chicken with a fork and if the juices run clear, the chicken is done and you will have a wonderfully caramelized vegetables to go with the perfectly cooked chicken. Yum!

Next time cook separately. Your potatoes will take much longer than the thinly sliced onions and carrots. And your broccoli could burn by the time the potatoes are done. Start the potatoes in the oven for 15-20 min before adding the other veg. Will give it a head start. Everything should be tossed with oil, salt, pepper, and garlic if you wish.
Re-assemble the vegetables and put them on a skewer. Add salt and pepper and grill medium-high. Baste with BBQ sauce (or a homemade slurry with your choice of seasoning) while you turn them.

Airfryer would do a beautiful job, but since it’s a bigger quantity go with the oven as other’s have said as it will be more hands off.
