I would like to make a Sfincione palermitano and its made with semola flour. I realized that I know nothing about that, and don’t know which one to use, there is a more coarse or more fine, there is also durum which is different? But at the same time all of them is made with durum wheat yet durum flour is different from semolina. I could only find this in my country online since the one you can buy is the coarse semolina grind thats how we call it. Is it a good brand? Is it good for my Sfincione?
