Starting an 8 Hour slow cook. 5 lbs boneless skinless chicken breasts, 4 lbs crushed tomatoes, 3 quarts of chicken broth, white mushrooms, onions, Italian parsley, roasted garlic, sliced green olives, hot banana pepper rings, capers, roasted red bell peppers, sun- dried tomatoes, and various spices.

    Sounds delicious! Don’t know what it is. But it sounds delicious! The only thing I noticed because I do some slow cooking myself, is that with mushrooms, it doesn’t take long to cook them even in a slow cooker. So you usually throw them in at the last half an hour or hour of cooking. Having them in for 5 hours may make then turn really soft or maybe break down completely.

    Let me know how the mushrooms turn out. I’ve heard they shouldn’t be in the slow cooker for more than an hour so I’m curious if they actually will be fine.

    A note about the chicken—I’ve cooked breasts for 8 hours many times as well and it turns out amazing. Everyone who comments on this subreddit that it will be dry has never tried it!
