  9. I was FOH for 16 years but I learned a lot. This whole picture is a fucking nightmare.

    The sad fact is, it would take 10-15 minutes to sort out and put straight and then maybe an investment of $300 worth of clear Cambros to sort out the shelving and be able to keep it organized.

    If were looking for *non*-violations: the trays above the highest salmon on the speed rack look to be covered. Gonna give benefit of doubt and assume there are dated labels on the top.

    I would quit immediately and call the health department. I’d call out the owner, chef and managers on my walk out the door and tell any customers to put their food down immediately.

  24. This gives me anxiety even more than normal. I already have 3 deli departments working out of 1 walk-in. And just knowing Thanksgiving is coming and 50 turkeys on the way with nowhere to put them when they get there, ND even less after I have to break them down.
