Most of the Dole whip copycat recipes have some high calorie ingredient like coconut milk or ice cream to get the creamy texture of the original, but I found that vegan whey (V-whey) produces the same creaminess without high cals. My creami recipe makes one pint (pictured is half a pint): – 88 ml pineapple juice – 10 g vegan whey, Vanilla Sundae flavor (used for creaminess, not protein, but you can add more for higher protein) – 313 g fresh pineapple – 1/2 tsp guar gum (adds more creaminess) – lemon juice to taste – 1 tsp sweetener, I used allulose, but use whatever you want
I blended everything, tasted it as I added sweetener and lemon, and then froze it overnight. Used the ice cream setting on the Creami.
If you don’t have a creami you could probably get a similar result using frozen pineapple. This was an amazing treat on a very, very hot day.
