Last week was pretty hectic and I forgot to post this beauty. I think I’m getting the hang of working with the type of fried rice we have. It’s a little sticky, but I kind of like it. I really like cooking the egg separately since you can actually get chunks of egg like you would these sausages. Speaking of them, we did not love Chinese sausages. They were a little too sweet and had a very processed texture, I would use bacon or char siu next time. Didn’t have scallions, but added some extra onion and veg for some color and veg.
