
I begrudgingly selected this meal because I wanted to expand on my lean meat options. Baked fish is not usually my jam. Right as I begin prepping, one of my long distance besties called. I poured wine and assured her I can talk and cook. I undestimated the wine on an empty stomach. Soon I was complaining about all the damn steps “Now I have to get out another pan to toast these almonds?! Ugh”. I promise I’m not usually this lazy, I was caught up in wine and girls trip planning. Well, I sat down to eat this dreaded meal and omgmgmgmg. That was way, way better than I thought it would be. I don’t even like tilapia. I swear, it’s the damn fry seasoning, makes everything delicious. Definitely would order again.

Made this tonight too. My only criticism was the couscous…I over cooked it just a bit, but The fish was on point. Loved the gremolata.
