    That pancetta seems a bit boiled and the spaghetti a bit dry, but it’s a just a picture.

    If it’s guanciale for real it seems not as crunchy as many would like. Plus the pepper should not be only put on top of the spaghetti at the end but also into the sauce, when it’s prepared with the eggs and the cheese.

    My take is to watch [this guy](https://www.youtube.com/watch?v=TiSQXkKZ-c4). He’s literally from Rome. And there are English subtitles if you don’t understand what he’s doing just by looking at him.

    Undercooked guanciale and the pepper should be put into the mixture of yolk and pecorino, after which you can add a sprinkling on top

    looks creamy but definetely that guanciale needs another way to be cooked. plus pepper should look a little bit better.

    Still it’s creamy…
