
I’m making Korean fried chicken but I find many variations on the sauce (different ingredients, such as the use of mirin)

Highly recommend Aaron and Claire.
Also, when you are making a new dish for the first time, it’s useful to look up 3-4 different recipes and compare them.
If one is glaringly different there could be typos or it’s not a good recipe.
But serious eats is pretty consistent with good recipes.
