Made Kenji’s vegan eggplant mayo (+ added some fresh from the garden basil and oregano)!

    [From this recipe.](https://www.seriouseats.com/fried-eggplant-sandwich-with-eggplant-mayo) I did not make the rest of this, but made grilled chicken sandwiches, and it was excellent with them. Who knew vegan mayo could taste so good?! (I had two small Asian eggplants from my CSA and I used both of them in this recipe. I halved them and cooked skin side up at 400 degrees for 30 minutes, and I also used half the amount of oil, juice from half a lemon (so more than 2 tsp), and a bit more than 2 tsp mustard cause I love mustard. I thought it turned out great even with all my mods.)
