It’s caramelized onions, lentils and rice. Add in garlic, salt, pepper, vegetable stock, and olive oil. That’s it. I add jalapeño powder to mine for kick. It’s super cheap and easy to make. Very healthy and vegetarian. This recipe is from one of my eldercare clients. $12.00 gets me about 15-20 large servings. A bad of sour cream or yogurt is an added treat with it. Hot or cold!

2 cups rice
1 bag of lentils
1/3 cup olive oil
2 32oz cartons of veggie stock
6 Garlic cloves
4-5 large yellow onions
Salt and pepper
Dice up onions and add to a stock pot with the olive oil and smashed garlic. Caramelize until brown (1-2 hours on medium). I like to microwave the onions on high for 5-10 minutes to cut the cooking time in half. The darker the onions (without burning them), the deeper the flavor.
Once the onions are cooked, add washed lentils and washed rice to the pot and stir. Add in veggie stock. It will look like soup. Raise the pot to a boil, stirring every few minutes to keep anything from burning to the bottom of the pot. Once at a boil, turn off the heat and cover with a lid. Let it sit for close to an hour.
Serve hot or cold. Usually with pita bread and yogurt or sour cream.
