    I keep hearing flank is a good cut for cutting into strips for steak burritos/fajitas, is that true?

    If you halved the peppers, and thick sliced the onions, think of how much more flavor they would have. Foil is simply a flavor barrier. Slice the peppers after getting a nice char.
