    I’d say the only reason to get a tomahawk is if you’re gonna get a supreme level crust or smoke it. Even then the meatless bone is always in the way…

    Also, many pros season the beef after slicing as well. Helps a lot.

    I like bone in ribeye, but the cowboy ribeye is stupid from a cooking perspective…the huge bone and thickness is a hurdle that I don’t want in my life

    Unpopular comment, but imo thick steaks like tomahawks over 1 1/4″ have decreasing marginal gain with increasing thickness because there is less crust to meat ratio.

    People love the crust because of flavor, but if you’re going to increase the thickness of the steak so much, you’re decreasing the amount of crust per bite. I believe this is why it’s underwhelming.
