Cooked this chicken from Costco yesterday afternoon on a 22″ Kettle using the Weber Rotisserie.
The skin of the chicken was seasoned with Peri Peri from The Spice House. It has a bit of heat and also give the skin a nice color. Drip pan below the bird had small potatoes, carrots, onions and red bell pepper. I would have added brussels sprouts but, alas, didn’t have any.
I placed rosemary sprigs and lemon slices under the skin on the breast side and stuffed the cavity with onion chunks and more lemon wedges.
I have cooked a few chickens on the rotisserie in the past but this was my first time using the Turbo Trusser to secure the legs and wings. Game changer, I highly recommend it. Twenty bucks on Amazon.
The cook ran about 2 hours and 45 minutes until the breasts got up to 165. Used pecan chunks for smoke flavor. This was the most flavorful chicken I’ve ever made on the Weber.
