I love crock pot meals, but a lot of my favorites are not the greatest for you nutrition wise. I’ve decided to start trying to up the nutritional value of some of my favorites. I’m not trying to be perfect, just comparable and less guilty to eat.

I started this week with chicken and stuffing, and I think it turned out very well. I over cooked the chicken a little and I may do celery instead of broccoli next time, but otherwise what I wanted.

Ingredients:

3 pounds of chicken breast (could easily do 2 pounds instead. Calories would just got up a little)

4 cups of chopped broccoli

15 ounces cut baby carrots

1 whole onion, chopped

1 tablespoon garlic

1 packet of lipton seasoning (if you’re not a seasoning packet fan, can easily be replaced by bouillon or other seasonings of choice)

Pepper to taste

1 box stovetop stuffing (again, can be replaced if you have a preference for something else. This comes out to 660 calories total)

2 cans cream of chicken soup

1 cup of nonfat plain Greek yogurt (I know, I know. Stay with me)

Step one: Add chicken breast, all veggies, garlic, seasonings, and 1 can of the cream of chicken soup to your crockpot. Mix in the soup and seasoning evenly.

Step 2: In separate bowl – mix together the stuffing mix, one can of cream of chicken soup, and the 1 cup of Greek yogurt.

Step 3: Pour the stuffing mix on top of the chicken and veggies.

Step 4: Cook on low for 5-6 hours or high for 3-4. Make sure to look up cooking times for your specific crock pot as it’s easier to overcook chicken breast than other meats.

This made 8 servings. If you use 2 pounds of chicken breast instead I suggest 6 servings for about 50 more calories a piece.
