I’m returning to work tomorrow from my parental leave, and have been trying to think of some easy meals to pack along with me. This is a pretty simple udon noodle stir fry with mushrooms, carrots, and broccoli. I topped it with some scrambled eggs and a side of cucumber slices. I’m not sure what to put in the other section though. Maybe some fruit? Open to suggestions!

I’m still figuring out measuring and weighing my food, so my nutritional info is a bit rough: 320 cal, 16g protein, 42g carbs, 4g fibre, 7g sugar, 11g fat.

It’s carb heavy, but my breakfast is usually pretty carb-lite, so by lunch it tends to be what I’m looking for.

    Personally I need more protein that that, I’d probably add 2-4 ounces of seasoned chicken breast. Maybe some hummus to dip those cucumber slices in.
