10 hour bulk. Cold snap in Sydney had temps fall to 6C overnight. Only 25% rise, should have left it for longer, but I thought 10 hours was enough. Recipe in the comments.

– 450g plain flour – 50g rye – 375ml water (75% hydration) – 100g starter – 10g salt
Mix together. Stretch and fold till smooth-ish. Bulk overnight. Bake straight away. 200C covered 20min. 230C uncovered 20min.
