Many people hating on souvi, saying it’s not authentic. But think of it like this: if you’re good at making a steak but prefer a simpler method, souvi still gives you the same taste and looks, with less effort.

It’s a very precise tool in the world of cooking. I personally love my circulator. I use it a lot. I get in a lot of friendly arguments, especially with folks that don’t want to try it. They’re mostly just being ignorant. But, it tends to be that way with many types of innovation….
Pork and chicken really shine with it. We’ve all had amazing beef steaks at some point, prepared via traditional methods. Although, we’ve all eaten a lot of dried out pork, and chicken made traditionally. Those are the two meats I really try to sell people on.
