Whole wheat sourdough bread from a local bakery toasted and topped with herby/lemony/garlicky Greek yogurt, anchovies, and seasoned sliced tomatoes from my garden. This meal is so refreshing, delicious, and satisfying. I’ve used both goat cheese and cottage cheese in place of the yogurt, but yogurt has been my favorite. Highly recommend! It’s so few calories than I can add another component to my lunch- yesterday it was an egg, day before it was a bean/cheese tostada, and today it’s some zucchini cake. 🙂
