It was also my first time trying the Spiced Calamari in Ragout Sauce tin from Jose Gourmet. What a delicious tin!!! It was incredible. I’m definitely stocking up on it.

    I wonder if it would help if you assembled a few so your guests could see how it’s done.

    Also, I don’t see a pickled element which I find to be a nice contrast.

    Are those cherries or grapes in the center?

    Maybe replace the chips with a cracker? I love chips all day, but they’re likely to be too thin to support anything but a mousse from an engineering perspective. If a guest put a piece of fish on a chip, it’s likely to break and result in an oily stain which could be hard to clean.

    Looks great tho!
