Dad’s Hot Dog Sauce
5 pounds hamburger
2 – 46 ounce cans tomato juice
5 teaspoons salt
3 large onions, diced
salt for the onions
1/2 cup chili powder
1 teaspoon pepper
1/4 cup sugar
1 can tomato paste
Place hamburger meat, one can of tomato juice, and salt in a large kettle.  Mix together with your hands, as if making a meatloaf. The meat should be mushy. Cook over medium heat to gently bubbling. Simmer until the meat is no longer pink. Stir often so it doesn’t stick.
While the hamburger is cooking, place onions, salt, and 1/2 cup of water in a sauce pan and cook until almost tender. Do not overcook or the onions will be mushy. Set aside, but do not drain the liquid off of the onions.
Once the hamburger is done, drain the grease off of the hamburger.  Return the hamburger meat to your kettle. Add in the chili powder, black pepper, and sugar. Stir and mix these in really well. Add the onions with the water and about half of the other can of tomato juice and the tomato paste. Stir until all of this is well incorporated.
Cook gently until thickened enough for your hot dog sauce. It will continue to thicken a little as it cools.

What you call it depends on where you’re from. We call it chili and we call the soupy kind, chili beans. It doesn’t make anyone wrong.

Our home town DQ used to have the best chili sauce on their hotdogs but their supplier stopped making it and I haven't eaten one since… only I ordered a chili bun no hotdog ❤❤.

no, no its really not the only way,… a potato masher does just as good as ones hands can, or you could use electric "beaters", lol,…. interesting recipe though. Im gonna try a few things from it for sure.

tip: take some of the tomato juice and put it in the empty can of tomato paste if you have to add more.. let it swish around and get the last bits out of the can! Looks grubbing bro

That is what is known as a WV hot dog!
When I was growing up you could tell what half of the state you hailed from by whether or not you ate slaw on your hot dog!!
Northern half, no slaw.
Southern half, slaw!!
When I moved to north central WV to teach in the early '70s we had an end of year cook out and I volunteered to bring the slaw. They were all bewildered why.
But after I fixed my hot dog others tried it and I converted a good many!!
Looks good but at my house the chili we eat is more like your sauce than a soup. In fact my children eat their chili on butter bread. the only thing your sauce doesn't have in it is green peppers. Might just have to make a batch of that sauce for the next family picnic. PS: I like my dogs a little, as my hubby says, burnt. lol

Hot Dog Chili by any other name is Hot Dog Chili. There, Fixed it for you. A Bowl of Chili eaten with a spoon is not Hot Dog Chili. A Hot Dog with Hot Dog Chili is finger food.

Proper ratio is 1 teaspoon salt per pound of meat. 5 teaspoons of salt is correct.

I beg to differ. "Hot dog chili" IS "Hot dog sauce." Calling it "sauce" may jive with your world view, but the rest of the world calls it "chili." No, not a bowl of chili, nor that aberration, chili with beans. It is the type of food called, "hot dog chili." Calling it sauce just sounds weird. I look forward to making the recipe.
