INGREDIENTS
2 cups (260 g) all-purpose flour
1 Tbsp baking powder (13 g)
1/4 tsp baking soda
1 tsp salt
2 Tbsp sugar (25 g)
3 large eggs (separated)
1 Tbsp (15 ml) cooking oil (or 2 Tbsp melted butter)
1 tsp vanilla extract
1 1/2 cups (354 ml) buttermilk (or whole milk)

  1. Instead of the milk to thin it out, try adding some plain (or any preferred flavor, really) yogurt. Greek yogurt actually works best. Maybe 2 or 3 good sized tablespoons. The addition of the yogurt in the batter makes THE BEST tasting pancakes EVER!! They are sooooo good.

  3. I love blueberry pancakes. I have a recipe from America’s test kitchen. If you use frozen blueberries, then add them to pancakes as you cook them, so you don’t turn the batter grey. Of course, fresh are available pretty much every day now!

  7. Made some pancakes for my kiddos … thick and thin. I didn’t give the thicker ones enough time to cook through and had to toss half but they are so fluffy. Will try this recipe and add a sprinkle of patience! And you look beautiful in the intro! 😍

  10. I admit you lose some of the texture of the blueberries but it spreads the flavor around evenly and keeps lumps out of the pancakes so that they have a smooth texture.

    What I do is blend my liquid (milk, I use oat milk but whatever the liquid is) in a blender with the blueberries and they are pureed do the pancakes are all BLUE its beautiful.
