How to Make Caesar Salad Dressing

Ingredients:

5 garlic cloves
minced 
2 anchovies
Pinch of salt

2 tsp Dijon mustard

1 lemon, juice only

4 dashes Worcestershire sauce
1 egg yolk

¼- ½ cup olive oil

¼ cup Parmesan Reggiano, grated

Directions:

Using a mortar and pestle, mash together the garlic, salt and anchovies until a paste forms. Transfer this to a bowl and add the mustard, lemon juice and Worcestershire sauce. Whisk to combine. Add the egg yolk and while whisking vigorously, add the olive oil in a slow, steady stream to emulsify. Start with ¼ cup of oil and add to the consistency desired. Add the parmesan and season with black pepper.

This dressing is enough for one 1-2 heads of lettuce (traditionally Romaine) and should be used right away.

  4. Best video by far no talking and wasting time just showing ingredients and amount of ingredients and the finished product thank you. Although it's a bit yellow looks like you could have mixed up the egg and oil a little more

  6. Add the olive oil to the base mix. A drizzle at a time whipping constantly until creamy like mayonnaise . Then squeeze in the lemon juice to obtain a creamier dressing .

  7. Can you store this in the fridge for meal preps? And if so, how long can i store it?

  8. When YouTube was in its infancy ,a chef had a video on his Ceasar salad which up to this day 2023, used and tweaked. I wished I saved that video because I can’t find it. Every Thanksgiving, I’m the one that brings the ceasar salad. 😉.
    Also my in-laws are of spaniard so I generously use anchiovy😉
