You can also make a pesto w/ pine nuts/walnuts, olive oil, and parmigiano reggiano. Basically a standard pesto recipe but sub the basil

But I’d also just experiment. Just chop and toss into all sorts of things that might do well with a bit of minty taste. Toss into ramen, jjigae, doenjang. Try topping a pizza with it. Make salads with sesame dressing. I’d try putting it in dumplings. Make bibimbap.
