
I’ve been out of country the last few years, and lent my canning stuff to a friend, all of which mostly ended up in storage. There was a jar of an old batch hiding in there that never got consumed. It’s an interesting comparison between a brand new fresh batch! Something something oxidization maybe? Air seal is still sealed. Anyone can shed light on what’s gone on with it to change the colour?

As long as the seal is intact and the pectin has held up, you should be fine! Oxidization happens. The taste may not be as good as the fresh, but it’s fine.
