    Until recently, I had been taught to never stack full canning jars. That teaching has recently been corrected to never stack full canning jars over 2 high, and to place cardboard between the upper and lower jars. The weight of the upper tiers can cause a false sense of a safe seal of the jars on the lower levels.

    Hooray for jumping into the canning world. It is enjoyable to preserve food you have grown. But please be very careful and follow recipe instructions exactly. I’m concerned that there is too much headspace in your jars. If anything is fizzy or bubbly, smells off, or doesn’t make that sound (sssst) when you open it….then don’t eat it.
