Just made this. My wife and I absolutely love it. Especially with the creame fraiche I made.
I had no sour cream but used French onion dip and it came out good. I mean it has onion flavor and the sour cream is already in the dip. I just mixed it into the pot.

I don't think that last thing you said was racist. If you dine out for Mexican food, it's common for the people waiting on you to be Latino or Latina. For Asian cooking, employees will commonly be Asian. Same thing with Italian restaurants.
As for the wine, don't worry about getting drunk, cooking it will kill the alcohol.
The way the creme fraiche changes the color of the beef or veal stock makes me think of the way creamer changes the color of my coffee. Just perfect!

Hey Chef John, can I substitute some of the "powdered buttermilk" into the heavy whipping cream to make the creme fresh? This is about the only recipe I make that uses buttermilk. I hate to buy a quart or half gallon of cultured buttermilk and only use a tablespoon of it and wind up throwing the rest of it away. 😢

Late LATE LATE to the party but honestly? If you dollop out the sour cream into another bowl and temper and fold a bit of the beefy broth/sauce mixture in a spoon at a time until you've roughly added enough to thin it out and get it stable before you add it all to temper it- it works wonders, same with taking it OFF The heat if you're using electric, or turning the burner off if using gas- before adding the tempered and mixed sour cream.
I've never had it break or separate on me.
Stroganoff made with potatoes is gorgeous.

Everybody says Don't crowd the Pan. And proceed to do just that. The other really annoying thing? A little bit. A little bit of this, a little bit of that, etc. FFS, tell us how much, shut up and cook.

We use beef tenderloin as compared to chuck. Why, because that's what we have. We've made no other changes to the recipe. We also found some wide noodles, 'Flora Homestyle Egg Pappardelle Nest'. They go perfectly with the meal. I'll be making it tonight for the 6th time and so far it has been fantastic. On a Flavor to Effort ratio I'd give this a 9 out of 10. For comparison, using the traditional method for making hollandaise sauce for Eggs Benedict takes a lot of effort, so while the flavor is a 9 out of 10, the Flavor to Effort ratio is a 5 out of 10.
