Meat Loaf

Cook: 1 hr 25 min
Yield: 6 servings

Ingredients
1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)
Directions
Preheat the oven to 325 degrees F.
Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don’t mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

Can this recipe be cut in half?
I have never been a huge fan of meatloaf. Didn't hate it, just never would have been my first choice. Made this and it was easily the best I've ever had. I didn't even have ground chuck and used regular ground beef. I mixed the ketchup with BBQ sauce and it was amazing.
Ina is the mistress of Technique. You gotta give Ina her due. She's exacting and she knows when to use her hands. This recipe has a ton of flavor – with just beef, no pork or veal.
This isn't a good recipe.

Ina is a clearly an experienced chef but this looks terrible… sorry. i hate a free-form rustic meatloaf look and I hate the sautéed onion mixture.
Ina…@ 1:55 you say pop it in the oven at 350 degrees, BUT, your posted recipe says 325! Help…which is it? It’s put me in a bit of a panic since I followed the posted temp, but after replaying that spot on your vid, you definitely say 350. Yikes.😬

She said 3 tablespoons of Worcestershire sauce but that doesn’t look like the appropriate measurement based on the measuring cup she used…🤷🏻♀️
MEAT LOAF (INAS )
Set Oven to 350
2 & 1/2 LBS Ground Chuck
Sautéed onions 🧅 (3cups diced with 1tsp chopped thyme leaves -2 tsp kosher salt 🧂-1tsp black pepper -cook low heat till translucent then add 3 Tbs Worcestershire sauce—1/3 C chicken stock-1 Tbs tomato paste then mix cool slightly . )
Add onions mixture to meat –
Add 1/2 dry bread crumbs
And two eggs -pour on top of
meatloaf & toss with fork or hands .
Form it lightly not too tight on cookie sheet or pan & smooth 1/2 cup catsup over the top of meat
Bake in oven for 1 hour & 10 minutes or until done …
Put a pan of hot water under the pan to make sure it gets moist …

Ina is a star. She has such a welcoming and engaging personality. It's almost as if one is in the kitchen with her. She's right up there with Nigella Lawson in the UK who is an absolutely stunning woman, just like Ina. I watch them both every day either on the Food Network Channel or on YouTube…in Australia.
@foodnetwork In the video she says, 350 degrees, in the linked recipe, it says 325 degrees. Which is it? Edit: also, Ina says 1 hr to 1 hr 10 mins, whereas the recipe says 1 hr to 1 and a quarter hour. Cmon Food Network. Do you even watch these videos?
I use breadcrumbs and stuffing mix when I make my meatloafs.

I have to have milk added to my meatloaf recipe. It changes the consistency of the meat and makes it much better. Maybe it's a German thing. My recipe is passed down from my Great-Grandmother who brought it from her homeland.
Plain & simple. Ina is a wonderful chef. Her personality makes her easy to watch & enjoy.

In the transcript she says a 350 degree oven but the recipe says 325 for an hour and hour and 25 minutes! Which one is it?
Here's a tip I found today. You don't need chicken broth, just deglaze the pan with the onions with a little bit of water. My meatloaf came out great. I don't keep chicken broth in the house
I also substitute an open bag of crackers (crumbled of course) for the bread crumbs I didn't use any salt because of the salt on the crackers
I have used her recipe for many years doing it exactly like she does except for my topping is ketchup, brown sugar and a smidge of mustard all mixed together and added about 10 minutes before it’s done. It is slap your momma good! If you knew my momma you would know that’s a life threatening comment 😂so it’s really good 😂😂

I've never ever been able to duplicate my mom’s meatloaf recipe! She has a lot of sage in it and whenever I try, the loaf turns out GREEN! This I can do though!
Hmm. I ended up cooking the meatloaf at 325F for one hour forty minutes and just put it back in the oven because the internal temperature was only 150 degrees. I had a pan of water (hot water from the beginning) on a lower rack and just pulled it out, thinking that might be the cause. Thoughts?

I just finished enjoying this meat loaf. Ms. Garten, I want to thank you. I also added finely chopped bell pepper and jalapeno. I mixed ketchup and barbecue sauce for the topping. I'm a happy camper with leftovers for the next three days. Amazing recipe.
The opposite of other chefs. 3 eggs, put ketchup on the last 10 minutes. 2lbs of ground chuck. Good stuff. Iv'e made meatloa 20 different ways. Some better than the others
