Curried chickpea salad, tofu scramble, pepper jack cheezy sauce, taco spiced quinoa, baked tofu crumbles, red wine vinaigrette, and chopped veggies for east salad assembly. This week accidentally became very tofu heavy – normally I wouldn’t make two different types of tofu but I had a couple packages that were expiring soon so I leaned into it 😂
