  1. I’m going to use the French green lentils because they keep their shape. In fact, I will make this when I get home from work today. All summer long, I have tabbouleh nearly every day, made either with bulgur or couscous. Lentils will change things up nicely πŸ˜ƒ Thank you, Dimitra.

  5. I made this today. It is absolutely delicious! The dressing has so much flavor! I overcooked my lentils but I can still eat them b/c the dressing totally outshines them. I did use 2 lemons so maybe I had a little extra lemon juice but it was perfect. I ate it with some chicken and stuffed grape leaves that my grocery store has (imported) and my whole meal was sosososo good.

  8. Thank you Dmitra from the Philippines!! I tried this tonight and everyone loved it. Lentils are hard to find here but lots of mongo beans. It worked great as a substitute. I also used lots of cilantro, a whole small clove of minced garlic, and sage instead of the mint and parsley. Delicious! Its wonderful to find a healthy and tasty vegetarian version for an otherwise plain meal. I've been trying international dishes and have enjoyed your vegetarian mousakka as well. Next week, I'll try the white beans with kale. Can't wait πŸ™‚

  9. Great receipe, will try it. But I wonder how will you get all the good protein and stuff if you throw away the cooked juice from the lentil ?? I rather cook it with very little water and let the lentils absorb the water completely, just like how we cook rice.
