For the schnitzel, I used regular panko blitzed in the food processor for 15-20 seconds. I didn’t bother sifting it. Used whiskey to aid the puffing process and was very happy with the result, no odor or taste remained from the alcohol. Cooked it in lard. Didn’t have any cabbage, so subbed romaine lettuce for the spaetzle and it was absolutely delicious!
My least favorite part was hammering out the meat. I tried the frying pan method Kenji uses in the video and it just didn’t seem to be going anywhere, so eventually I switched to a large rolling pin and banged it out that way, which worked much more quickly. In the future, I would probably flatten the meat ahead of time since it was the most time consuming part for me.
My husband said it was the best schnitzel he’s had this side of Salzburg. Thanks Kenji! Not sure if he is actually on this sub, but I really appreciate his POV videos where he cooks in one fell swoop without any cuts or edits. It made me feel much more confident when I could follow along exactly what he was doing, flip the meat at the same time he did, etc. I’m going to make it again for my mom later this week as we used to live in Germany and she misses food like this.
