Cretan Dakos, or Krhtikos Ntakos, are the perfect healthy snack or light lunch on a hot summer’s day. A little like an Italian bruschetta, they are basically a crisp bread (here a Dakos, or barley rusk) topped with tomatoes, feta, olives and capers, and drizzled in olive oil. They provide everything I want in the sun – fresh veg, salty feta and that savoury bite of caper. What’s your go-to summertime staple?
