Ingredients:

4 large portobello mushrooms
1 tablespoon olive oil
1/2 cup chopped onion
2 cloves garlic, minced
4 cups fresh spinach
1/4 cup crumbled feta cheese
1/4 cup breadcrumbs
Salt and pepper to taste
Instructions:

1. Preheat your oven to 375°F (190°C).
2. Remove the stems and gills from the portobello mushrooms and place them on a baking sheet.
3. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté for 2-3 minutes, until the onion is translucent.
4. Add the spinach to the skillet and cook for 2-3 minutes, until wilted.
5. Remove the skillet from the heat and stir in the feta cheese and breadcrumbs. Season with salt and pepper to taste.
6. Spoon the spinach and feta mixture into the portobello mushroom caps.
7. Bake in the oven for 20-25 minutes, until the mushrooms are tender and the filling is golden brown.
8. Serve the stuffed mushrooms hot and enjoy!
