
My mum gave me this suspiciously hairy piece of pork and I have no idea how to prepare it. I must assume the skin is to be removed because there are many a hair follicle with hair still attached. Do I roast it and then cut the skin off? Do I thaw it out, cut the skin off, then use as I would any other fatty cut of pork? I suspect this was acquired by my chef brother with whom I am distant and she had no idea what to do with it. Please help!
