Ingredients
1/4 cup olive oil
1/2 red onion, finely chopped
3 garlic cloves, grated
2 cups orzo pasta
4 cups hot chicken or vegetable broth
1/4 cup lemon juice
2 roasted red peppers, chopped
1/2 cup frozen green peas
Kalamata olives, chopped
6 oz (150g) feta cheese, crumbled
1 tablespoon capers
1-2 tablespoons finely chopped parsley
Instructions
Heat a skillet over medium heat.
Add olive oil and onion and cook until soft and golden.
Add the garlic and heat until fragrant.
Add the orzo and cook until toasted.
Add the hot broth, 1-2 teaspoons salt, peas, roasted red peppers, olives, and lemon juice. Bring to a boil and reduce the heat to low. Simmer for 12 minutes.
Add the capers and and feta cheese, toss together. Warm through for 2-3 minutes.
Garnish with parsley and serve.

I do have a question if you don’t mind?
I watch a lot of vlogs by chefs like yourself and whenever “roasted red peppers” are used in a recipe, it’s never mentioned if the roasted red peppers are the more typical jarred ones with vinegar and oil or just jarred in oil, preferably olive oil? The ones that are in only oil are pretty much impossible to find because of shelf life and not really preserved with vinegar. What type are yours you use if you don’t mind me asking…just oil or oil vinegar?

I just made this tonight. So great and easy! I just happened to have all the ingredients. But I halved the recipe and that was enough for 4 servings. I think next time I may add a pinch of red pepper flakes and some oregano just for fun.
Looks wonderful, can hardly wait to try. Questions — How would this be the next day — cold? Would the orzo continue to absorb the stock? Could it be re-heated on the stove-top?

Definitely wouldn't add that much salt given that the olives and feta is salty.
