Pickle them, corn and cherry tomato salsa (Ball), bruchestta in a jar (Ball).

Dice them up and can in pints, make salsa from them, juice?

Oven roast them with olive oil and garlic. Pack up in ziplock bags and freeze. Ok, not canning I know, but they are delicious.

My favorite thing to do with tomatoes that I don’t know what to do with is sauté them with mixed veggies (usually squash/cabbage/beans) in olive oil and Italian herbs, then toss it all in with some pasta and sprinkle cheese on top….always delicious, never disappoints! I’m literally eating that for dinner as I type this!
