Moroccan Style Seafood Skewers:  Seafood Marinated in Chermoula & Grilled To Absolute Perfection.  These are easy to make and are the perfectly light meal for summer.  Here’s how you make them at home!  

Ingredients:
2 lbs seafood (I’m using 1lb firm whitefish + 1lb of shrimp)
5 cloves of garlic, peeled
1/2c fresh parsley, finely chopped
1/2c fresh cilantro, finely chopped
2t ground cumin
1T ground paprika
1/2t ground black pepper
1/2t salt
3T olive oil
1 small or 1/2 large @mina preserved lemon, chopped
Juice from 1/2 a medium size lemon
Skewers (pre-soaked if using wooden skewers)

Clean and prepare your seafood of choice.  Set aside while you prepare the chermoula.  

Using a mortal & pestle or food processor combine garlic, spices, herbs, olive oil, lemon juice and preserved lemon.  The end result should be a relatively thick paste.  Add 3-4 heaping tablespoons of chermoula into your seafood and mix until the seafood is evenly coated.  Cover the bowl and refrigerate for 2 hours.

When you’re ready to grill, prepare the grill and thread the marinated seafood pieces onto the skewers leaving no space between each piece.

Place the skewers on the preheated grill and cook for several minutes on each side until the seafood is slightly charged and nicely cooked.

Enjoy with crusty bread, an assortment of Moroccan salads, @mina Moroccan olives and mint tea.
