How you actually do greek dressing: About a quarter cup of vinegar, about a third cup of olive oil. don't mix them. Add to vinegar: Mint, Lemon Zest, Lemon Juice Toss with salad with vinegar, then toss again with Oil. You do this because oil seals the veggies. You put the vinegar in first so the tomatoes and cukes will soak it.
Salad: Surprisingly this doesn't offend me. Not sure why you put chickpeas AND quinoa in there. one of them alone will be plenty of protein, but both are fine.
Why you put the lemon on after you've tossed the salad with oil, and don't even toss it after, is beyond me. You wasted the lemon. You will get none of that flavor in the salad. it'll just sit on top.
